Cassia Cinnamon is coarser, more spicy and less fragrant than Cinnamomum verum  (Ceylon). Cassia is the most common type used in South Africa whereas Ceylon (True Cinnamon) is favoured for its health benefits. To produce cinnamon, the tree’s bark is harvested, dried and fermented.
