The flavour of garlic granules is vastly different from fresh chopped garlic. It tastes sweeter and much less assertive than fresh garlic, but also without the caramelly, nutty undertones that you get from roasted garlic.
You use Garlic granules in liquid dishes that undergo some cooking time, to soften the pieces and let them release the garlic flavour.
