Oxtail Stew - Recipe

Ingredients
2 Tbsp To9 Oxtail Spice (Find at https://www.to9herbandspice.co.za/product-page/oxtail)
3kg Oxtail
2 Cups Hot Water
2 Cups Red Wine
5 Large Carrots, sliced
4 Medium Potatoes, quartered
1 Large Onion, chopped
1 Tbsp Tomato Purée
2 tsp Salt
1/4 Cup Maizena
Recipe Method

Put the oxtail in a large pot and add 2 cups of hot water, salt, and brown until the water has evaporated.
Reduce the heat, add the onion, and let the meat brown in its own fat.
Add the spice and wine, then cook over low heat for 2 hours. Keep checking if there is still enough liquid to cover the meat and add more water when necessary.
Add the potatoes and carrots, then cook until soft.
Add 1/4 cup of water to the maizena in a separate container and make a smooth paste.
Add the paste to the meat and gently stir. Simmer until the vegetables are cooked (15–20 minutes).
